Downgrading to 2.2.1
If you find out that iPhone OS 3.0 is not for you, you can downgrade back to an eariler firmware.
Step One- Download iPhone OS 2.2.1,
Download Links;

iPhone 3G: http://tinyurl.com/iphone3g-221-sizlopedia
Step Two- To upgrade; open up iTunes, connect your iPhone, Hold down 'Shift' and click 'Restore'. Now navigate to your downloaded .ipsw package. (eg. 'C:\\Pwnage\iPhone OS 2.2.1\iPhone1,2_2.2.1_5H11_Restore.ipsw' ) Let it install.
Step Three- Ignore the error message (eg. 1011, 1013, 1015), the firmware is installed thats just the error for the baseband being off.
Now you have downgraded to 2.2.1, you can now jailbreak again

*Note- Your baseband stays at what ever satge of 3.0 you got too.
